What it does

A knife does not wear away: its edge folds over. The stone removes metal just behind that folded edge until a clean apex comes back, then polishes it.

The 1000 side does the work. You stay on it until a burr can be felt along the whole length of the blade. The 6000 side removes that burr and leaves a smooth apex, the kind that cuts a tomato under its own weight.

Why this one

Because the knives we sell are ground to 15 degrees per side, and most supermarket sharpeners work at 20 or 22. Running a Japanese blade through a pull-through sharpener erases its factory edge in three seconds.

The angle guide clips onto the spine and holds 15 degrees without thought. The silicone base stops the stone from moving, which is the main cause of scratches for a beginner.

Water, and flattening. Sharpening in the same spot hollows a stone; you true it on abrasive paper laid over glass.

Frequently asked

Why a stone rather than a pull-through sharpener?

A pull-through sharpener imposes its own angle, usually 20 degrees, and tears metal away. On a Japanese blade ground at 15 degrees it rebuilds a blunter edge than the original. A stone respects the angle of the blade.

What do 1000 and 6000 mean?

The 1000 grit removes metal and reforms the edge. The 6000 grit barely cuts: it polishes and evens out what the 1000 produced. Always start at 1000, finish at 6000.

Does it really need soaking?

Yes, ten minutes in clean water, until it stops bubbling. A dry stone clogs, heats and scratches the blade.

Is it hard for a beginner?

The motion is learned in one session. The included guide holds 15 degrees while you concentrate on keeping the stroke even.

Does it suit my other knives?

Yes, any plain edge knife, Japanese or European. Serrated blades cannot be sharpened on a stone.

How often should I sharpen?

For daily home use, every two or three months. A blade that slides off tomato skin instead of entering it is asking for the stone.
