What is inside

Three blades, and the order in which you reach for them. The 20 cm gyuto does most of the board work. The 17 cm santoku takes over when the cutting is straight and repetitive. The 9 cm paring knife handles everything done in the hand, over the sink or the pan.

It is the contents of an honest knife block, without the four blades nobody uses.

Why VG10

The same steel in all three: a VG10 core at 60-61 HRC wrapped in 67 damascus layers. Same angle, same sharpening protocol, same care. One stone keeps the whole set.

What it asks for

The three blades live in the case, never in a cutlery drawer. No dishwasher. A pass on a stone every two or three months, 1000 then 6000, and all three come back to their original edge.

Frequently asked

Why these three knives and no others?

Because together they cover a whole kitchen. The gyuto for board work, the santoku for straight cuts on vegetables and fish, the paring knife for what is done in the hand. A fourth knife would only add volume.

Is it cheaper than buying the three separately?

Yes, by 8 euros, and the case is included.

Does it work as a gift?

That is its main use. The paulownia case is presented closed, with no price marking. Note that handing over a knife still requires the age check made at checkout.

Is the whetstone included?

No. It is added to the cart separately, and it is strongly advised: these blades are ground at 15 degrees per side, an angle that pull-through sharpeners destroy.

Are your knives made in Japan?

No, and we do not make them either. We buy them from a Chinese workshop specialised in VG10. The style and geometry are Japanese, the manufacturing is not.

Do they arrive sharp?

Yes. All three leave the workshop sharpened to 15 degrees per side, and we check every edge before dispatch.
